How much do you know about ten types of Italian pizza?

Do you know that Italy has many different types of pizza, each with its own history and tradition from every region of Italy? On the occasion of Global Italian Cuisine Week, we’re introducing ten different types of Italian pizza.

1.The Authentic Neapolitan Pizza

STG (Protected Designation of Origin) is an EU-established label designed to protect traditional food products. The ‘Authentic Neapolitan Handmade Pizza’ adheres to the UNI 10791:98 regulation, established by the True Neapolitan Pizza Association. The pizza has a diameter not exceeding 35 centimeters, a raised edge, a central thickness of 0.4 centimeters, and a crust height of 1-2 centimeters, appearing golden without bubbles or scorching. It boasts a soft and elastic texture, is easily foldable, and possesses a unique flavor, with the crust embodying a well-fermented and baked bread taste.

2.Soft Pizza

A baked food item with a height of approximately 2-3 centimeters, featuring a thin and crispy bottom and a delicate, regular honeycomb structure inside. The texture is soft, melting in the mouth, and it does not have a raised edge. Typically, it is baked using a round baking pan with a diameter of 40 centimeters (or a rectangular pan measuring 60 centimeters by 40 centimeters). In the preparation process, a pre-baking step involves adding tomatoes and saltwater, followed by baking and then adding mozzarella cheese for continued baking. Other fresh ingredients can be added directly after baking is complete.

3.Crunchy Pizza

A bake-at-home food item. It has a height of approximately 1-1.5 centimeters and is baked using a rectangular pan (60 centimeters by 40 centimeters by 2 centimeters). The bottom is crispy, and the interior structure features a delicate and even honeycomb pattern, with a raised edge. In the preparation process, there is a pre-baking step involving adding tomatoes and saltwater, followed by adding mozzarella cheese and other toppings for continued baking until completion.

4.One Meter Shovel Pizza®(Luigi De La Mura Patent Food)

The One Meter Pizza is a typical pizza originating from the Sorrento Peninsula, with a recipe invented by Luigi De La Mura in the 1950s. In 1960, he patented the name ‘One Meter Pizza.’ This pizza belongs to the category of baked goods with a raised edge. Due to direct baking at the bottom of the oven, it has a thick and crispy texture. The interior structure is approximately 1-1.5 centimeters high, featuring an irregular honeycomb pattern. In the preparation process, the dough is elongated and shaped in advance, then spread onto a wooden shovel. Different flavors of toppings are added to various parts of the pizza.

5.Roman-style Shovel Pizza

A baked food item with a height of approximately 3-5 centimeters, featuring an irregular shape and an extremely crispy texture. It has no raised edge, and toppings can be added both inside the dough (similar to a calzone) or on the surface. The interior has an irregular large honeycomb pattern (similar to ‘ciabatta’ bread), with the starch structure almost entirely hollow. In the preparation process, the dough is elongated to various lengths and can be baked directly in the oven or placed in a baking pan.

6.Small Plate Baked Pizza(Giuseppe Giordano Patent Food)

A pizza baked in a metal ring with a diameter of approximately 20 centimeters. This pizza combines the crispy texture of oven baking while allowing the crust to achieve a thickness of about 3 centimeters. The dough is soft, with a slightly raised edge and a crispy texture. The baked crust is thick and can hold a variety of toppings.

7.Round Shovel Pizza

A food item typically baked using a round shovel, circular in shape with a diameter of approximately 20 centimeters. The bottom is crispy, the interior is soft, and the height is about 2 centimeters. An even honeycomb pattern is distributed throughout the entire circular crust. The baked crust is thick and can accommodate a variety of toppings.

8.Thin and Crispy Pizza

A classic pan-baked pizza, a circular baked food item with a diameter of approximately 28-32 centimeters. The edge (raised crust) is slightly elevated, presenting a uniform amber color, while the central part features a honeycomb pattern, thin, and crispy. The thickness of the central part is approximately 0.6 centimeters.

9.Soft and Fluffy Pizza

A classic pan-baked pizza, a circular baked food item with a diameter of approximately 28-32 centimeters. The edge (raised crust) is prominently elevated, displaying a uniform amber color and featuring a honeycomb pattern. The interior is soft, elastic, with a thickness of approximately 1 centimeter.

10.Terralmonti Traditional Whole Wheat Pizza

A classic Mediterranean-style pizza, a circular baked food item with a diameter of approximately 25-30 centimeters. The edge (raised crust) is slightly elevated, displaying a uniform amber color and featuring a honeycomb pattern in the central part, thin and crispy. The thickness of the central part is approximately 0.6 centimeters.
